i'm going to wichita, far from this opera forevermore

Today was the usual Monday slog - I got up fairly early (for me) and did a bit of writing before work, which felt good. Then I had a variety of tasks and meetings all day, as per usual. One meeting ran way over, so I turned my camera off so that I could go to the kitchen and throw together some chicken and rice and slip it into the oven before my next meeting. This was key, since it takes two hours to cook and I wanted to eat before eight p.m.

As it turns out, it took closer to two and a half. I managed to find some bone-in skin-on chicken breasts the last time I was at whole foods, which are seemingly impossible to find around here. This is how the chicken and rice casserole of my youth was made, so I was excited to try it. And the result was excellent, although the breasts were too large and so it took a long time to get to the right temp. But it was #worthit and I'll have to buy the entire stock of bone-in breasts next time I see them. 

While we were eating, [censored] and I watched the SNL concert from last weekend. It was a mixed bag and my least favorite of the 50th anniversary shows, but still entertaining (and Cher is still incredibly hot even though she's 78). We also discovered that the B-52s are contemporaries of Snoop Dogg, which we didn't know - somehow "Love Shack" seems like it came out much earlier than 1989.

But now that I have imparted all this wisdom to you, it's time for bed - goodnight!
